SOUPE A L'OIGNON GRATINEE (onion soup au gratin)
Serves 3 to 4
Soften the onions gently in the butter: they must not color. Pour in the consommé or the bouillon and season with salt and pepper. Cover and simmer for 20 minutes.
Remove and pour into an earthenware pot, or an ovenproof casserole.
Add the port beaten with the yolk of the egg. Stir well.
Place the pieces of toasted bread on the surface of the soup.
Sprinkle with the cheese and place in the oven till nicely browned. Serve very hot straight from the pot or the casserole.

Good onion rings are hard to find. All too often, the onion rings that I get at diners or from the market are over-fried. The onion has gone way beyond tender and sweet and into the stage best described as flavorless and immaterial. The breading is usually so dominating that what little flavor is left in the overcooked onion requires intense concentration to identify. Even worse are the frozen supermarket onion rings that you reheat in the oven. They either come out soggy or, if the texture is right, they taste as if they were a reconstituted bread product with onion powder flavoring. When Cook's Country Magazine published a new recipe for Oven-Fried Onion Rings involving saltines and kettle-cooked potato chips, I knew I needed to try it.Oven-Fried Onion Rings (serves 4)
So Easy Baked Parmesan-Onion Dip
If you are an onion-lover like my family is, then you will LOVE this easy recipe! Since the Parmesan cheese is salty there is no need to add in any extra salt. The recipe can easily be doubled. Use only Hellman's mayonnaise for this, I have made this with other brands and it just was not as good! Serve this dip with Ritz butter crackers YUMMMMMM! Chicken breasts or pieces can be used in place of the pork chops, also frozen thawed tater tots in place of the chopped crinkle fries if desired, and you can use two cans French fried onion rings if desired, one for the filling and one for the top. Green Bean Casserole> Haven't gotten tired of it yet. We use canned, but it's more of a matter of convenience. I don't think we really care if it is canned or frozen. We also add more of the french onions than it calls for. We use the recipe off of the french onion container (can't remember which brand it is). One thing I'd be interested in is if anyone has a crockpot version of it? I assume it would be a low cooking time like 1-2 hours, and you would use real onion instead of french onions for the cooking time, stirring in or topping it with french onion right before serving. Just not sure how long to heat it to get it to that baked consistency before serving.

Careful timing in cooking contributes greatly to Alexandre Dumaine's insistence on precision in the kitchen.
A kitchen alarm clock and a keen interest in preparing food are about all that are required-provided the ingredients are of the best quality-to be able to succeed in perfecting simple dishes.
A good test is to be able to prepare the Fillets of John Dory* and the accompanying Sauce Hollandaise* so that they are ready to be served together the minute that both of them are just cooked and no more.
Two conclusions can be drawn from Alexandra Dumaine's remark that "exactness in cooking is difficult to achieve."
One is that the difficulty resides in achieving the exact required result, according to the precise indications in the recipe; the other, that you have to reckon with your own particular taste and that of the family, or of your guests.
We are not all born with uniform palates: you may like garlic, others may not; some prefer lemon juice, instead of vinegar, in the salad dressing, etc.
There must, therefore, remain a margin in the prescribed amount of herbs and seasoning to be used in the preparation of these dishes.
